Three-phase chip fryer install at a Putney members club.

Three-phase chip fryer swap-out at a Putney members club kitchen. Old unit isolated and stripped, new fryer positioned and connected, full electrical testing, commissioning and thermostat verification. Second fryer flagged on site for unsafe wiring and a faulty thermostat.

The brief

Members club kitchen had ordered a replacement three-phase chip fryer. Existing fryer was at end-of-life. Job: strip out the old unit, install and commission the new one, complete electrical certification.

Strip-out

Attended site, signed in with security, liaised with kitchen staff. Isolated and safely disconnected the existing three-phase chip fryer at the consumer unit. Stripped and removed the old unit from site.

New install

Prepared the new three-phase fryer for installation. Positioned in the designated kitchen space. Completed all electrical connections to the existing three-phase supply, then reinstated power.

Carried out full electrical testing to confirm safe operation: insulation resistance, earth continuity, polarity and earth-fault loop impedance per BS 7671. All values within tolerance.

Commission

Filled the unit with oil. Commissioned the fryer through its temperature run. Tested the thermostat function and the control panel to confirm correct temperature regulation across the operating range. All checks completed. New fryer operating as intended and handed over to the head chef.

While on site, a secondary find

Attention was drawn by kitchen staff to a separate existing fryer that had been "playing up". Upon inspection, the second unit was found to have loose wiring at the connection block and a faulty thermostat. The combination of unsafe electrical connections and a thermostat unable to regulate properly is a fire and burn risk.

The second fryer was isolated for safety. Replacement parts identified and ordered. Return visit scheduled to complete the repair once parts arrived.

Three-phase commercial fryer strip-out and new install with electrical certification typically £450-£800 + VAT depending on power-supply rework. Return visit to repair the second fryer (parts plus labour) typically £180-£320 + VAT plus parts.
